Week of November 10, 2014
I get most of my menu ideas from Pinterest. I pin all week and go back on Sunday or Saturday to plan my meals and grocery list.
I'm pretty excited we are expecting a cold front this week so it's time to make soups!I live in Texas and it's just hard to eat stew when it's 90 degrees out.

Crockpot Buffalo Chicken Chili (E) - this will be my first time making it but I've seen rave reviews on the THM Facebook page. I'm using fat free cream cheese for an E. With full fat cream cheese it does fit an S setting as well with just 1 can of beans for the entire recipe. Buffalo chicken is my husband's favorite. No doubt this will be a winner!
{SLOW COOKER} SWEET POTATO, CHICKEN, AND QUINOA SOUP (E) - again haven't tried this yet but been eyeing it for weeks. So glad it's cool enough outside to enjoy soup!
Mexican Casserole (S) - instructions under the photo. I plan to add ground beef to make this similar to a favorite meal in our home.
Million Dollar Spaghetti Squash (S) - I add about 4oz of cream cheese to the ricotta for a yummy creaminess!
Quinoa Enchilada Casserole (E) - For an E meal I'll cut the cheddar cheese and sub fat free mozzarella. This looks so yummy!! I hope my husband likes it as much as I know I will. He's not crazy about quinoa...
